Red Santo Domingo

About the Origin

Santo Domingo, the capital of the Dominican Republic (Carribean), yields only small cocoa harvests, but of an outstanding quality. Cultivation is concentrated in the Northern Cibao valley, the most northerly cocoa growing area in the world. Most of the farms grow Forastero cocoa (Hispaniola cocoa to be more precise) with very small beans but fine aromatic properties.

About the Cocoa

Santo Dominican cocoa beans have a strong taste with astringent and bitter notes. On top of that, they offer the rich and acidic freshness of red fruit, spicy notes and interesting tannins typical of red wine. The total yield is small and its unique, rare flavvors make a cocoa powder of outstanding quality. Santo Dominican cocoa is available with Fairtrade and Organic Certification. It is classified Edel-Fine.
